Blistered Shishitos with Black Pepper Lime Yogurt

The Chai Pani team cannot get enough of Jugaad It (and we get it, we're right there with them). This is the second recipe to prove it, right after Chai Pani Asheville's MSG Tomato Martini

In this instalment, Chef Sahar Siddiqi found her own use for it. She's the Executive Chef at Chai Pani Decatur, a first-generation Pakistani American who trained at the Culinary Institute of America and came up through State Bird Provisions in San Francisco before landing in Atlanta. In 2023, she was a James Beard semifinalist for Best Chef: Southeast. By her own account, she spent years cooking other people's food. Decatur's menu is where she started cooking her own.

Her Blistered Shishitos with Black Pepper Lime Yogurt is built exactly the way she cooks: a handful of ingredients, each one doing real work.

A heavy hit of black pepper and bright lime juice give the yogurt its backbone, and Jugaad It ties the whole thing together underneath, the way it's meant to. She blisters the shishitos hard and fast in a screaming hot pan, then tosses them in Chaat Masala the second they come off the heat.

A few pro tips from Chef Sahar:
Eat it with your fingers. That part isn't optional, friends! She scaled this version for a home kitchen & says this batch makes enough for 3-4 to share as an appetizer or snack!

    For black pepper lime yogurt

    For blistered shishitos

    Preparation

    1. Mix all ingredients for black pepper lime yogurt together in a bowl.
    2. In a hot cast iron skillet, add oil. Once shimmering, immediately add the shishitos and let them blister on one side. Season with salt and let it cook for about 30 seconds to a minute. Flip the shishitos and let them blister on the other side. 30 seconds longer. Remove shishitos to a bowl and toss with chaat masala
    3. To plate, spread yogurt on the bottom of the plate. Top with shishitos! Use your fingers and enjoy!!
