Flavour Profile

Chai Pani Chaat Masala. The sour-salty finishing powder behind Indian street food. Amchoor does the tang, black salt does the funk.

Botiwalla Tandoori Masala. Mix it into full-fat yogurt and let the yogurt do the work. Tandoor flavour from a home oven or a grill.

Roasted Cumin Powder. Toasted before grinding, darker and nuttier than raw ground cumin, and meant for finishing rather than cooking.

Cumin Seed. Whole, for tempering. Into hot fat at the start, where it perfumes everything that follows.

Brown Mustard Seed. Sharper than yellow. The seeds need to pop in hot oil, which takes about thirty seconds.

Coriander Powder. Citrusy and mild, and the quiet workhorse. It gives a curry body and keeps the loud spices from tasting thin.

Kashmiri Chilli Powder. Prized for colour more than heat. That deep red in butter chicken comes from here.

Turmeric Powder. Earthy and faintly bitter. Its flavour compounds are fat-soluble, so it belongs in oil rather than water.

Amrit's Garam Masala. Meherwan's mother's household recipe. Nutmeg, clove, cinnamon, black peppercorn, cumin seed, green cardamom. Add it at the end.

Tellicherry Black Peppercorns. Left on the vine longer, so they're larger and more aromatic than standard pepper. Grind them fresh.
