Flavour Profile

Sweet, rich, and gently warming. Tomato and a touch of sugar set the base; smoked paprika adds a low smoky hum, and cardamom, cinnamon, clove, and nutmeg bring the warmth that makes butter chicken taste like butter chicken. Cayenne shows up as a glow, not a burn.

The mildest of the three packets, and the one to hand a spice-shy eater first.

Cooking Instructions

Recipe included on the packet:

Marinate the chicken: 1 lb boneless skinless chicken breasts or thighs, cut into 1-inch pieces · 1 tsp Butter Chicken Blend · 1 tsp vegetable or avocado oil

Combine chicken, Butter Chicken Blend, and oil in a mixing bowl. Cover and refrigerate until ready to cook.

Make the butter chicken sauce: 1/4 cup vegetable or avocado oil · 1 large yellow onion, diced · 1 small green bell pepper, diced · Kosher salt, to taste · 1 tsp ginger, minced or paste · 1 tsp garlic, minced or paste · 2 Tbsp Butter Chicken Blend, divided · 1 cup tomato puree · 3/4 cup heavy cream · 5 Tbsp unsalted butter, cubed · Pinch of granulated sugar

Add oil to a large pan on medium-high heat. Add onion, bell pepper, and a pinch of salt. Sauté until golden brown. Add 1 Tbsp of Butter Chicken Blend, ginger, and garlic. Sauté for one minute. Stir in tomato and 2 cups of hot water. Simmer on medium heat for about 10 minutes, stirring occasionally. Add the chicken and simmer until the internal temperature reaches 165°F, about 10 minutes.

Stir in the remaining 1 Tbsp of Butter Chicken Blend, heavy cream, butter, and a pinch of sugar. Taste and season to your liking. Serve with basmati rice or naan!
