Are the sweltering months of summer keeping you away from the stove? We feel you. Here's a recipe that keeps it cool. Ceviche is a Latin American seafood dish that combines fish with fresh citrus and vegetables to create a flavorful, bright dish that is served cold. We added our incredibly flavorful Pescado Verde seasoning to add notes of serrano chiles, Mexican oregano, orange, and lime. This amazing snack is very simple to put together but will make you feel fancy as hell, no heat necessary.
PESCADO VERDE SHRIMP CEVICHE
1 lb small shrimp fresh or frozen, cooked
1/4 cup orange juice, fresh squeezed
1/3 cup lime juice, fresh squeezed
1/4 cup red onion, small diced
2 cloves of garlic, minced or grated
1 jalapeno, seeded and small diced
1 medium tomato, small diced
1 Tbs Spicewalla Pescado Verde
1 avocado, small diced
Fresh cilantro, for garnish
Crackers or tortilla chips for serving
1. In a large mixing bowl combine shrimp, orange juice, lime juice, red onion, garlic, jalapeno, tomato, and Pescado Verde. Stir to combine and let marinate in the fridge for 10-12 minutes or up to an hour.
2. Just before serving, stir in avocado and garnish with fresh cilantro. Serve with crackers or tortilla chips.
