Hot Honey BBQ Chicken and Waffles

This chicken and waffles recipe seasoned with our Hot Honey BBQ is the perfect example of why sweet and spicy are a perfect pair. Ingredients

for the chicken marinade:

2 pounds boneless skinless chicken breast, cut or pounded thin

2 cups whole buttermilk

2 tsp Spicewalla Hot Honey BBQ 

for the waffles:

2 cups all purpose flour

1 Tbs baking powder

1 tsp kosher salt

2 large eggs, separated

2 cups buttermilk

6 Tbs unsalted butter, melted and cooled

3 Tbs granulated sugar

1 tsp vanilla extract

for the chicken dredge:

2 cups all purpose flour

1/4 cup cornstarch

1 Tbs Spicewalla Hot Honey BBQ

 

2-4 cups of neutral frying oil - vegetable, canola, peanut

 

for the maple hot honey sauce:

1/2 cup maple syrup

4 Tbs unsalted butter

2 Tbs Spicewalla Hot Honey BBQ

Preparation

  1. Marinate the chicken: place the chicken breasts in a large mixing bowl, add the buttermilk and Hot Honey BBQ seasoning, toss to fully coat the chicken breasts and place in the refrigerator for at least 4 hours or overnight.
  2. Make the waffle batter: in a medium mixing bowl, combine the flour, baking powder and salt. Stir to combine. Place the egg yolks in a large mixing bowl and the whites in a small mixing bowl. Set the whites aside. Add the buttermilk, melted butter, sugar and vanilla extract to the bowl with the yolks. Whisk together to fully incorporate. Whisk the egg whites until they are frothy and add to the batter, gently fold or stir in until combined. Set waffle batter aside.
  3. Make the chicken dredge: on a small baking sheet or plate combine the flour, cornstarch and Hot Honey BBQ seasoning, stir to combine and set aside. 
  4. Remove the chicken from the refrigerator. Add enough oil to a deep heavy-bottom or cast iron pan until it is about 2 inches deep. Heat the oil to 325*F. 
  5. Working with 1-2 pieces at a time, remove the chicken from the buttermilk mixture and place directly into the flour dredge, press the flour in the chicken and flip over numerous times until evenly coated. Carefully add the chicken one piece at a time to the oil being sure not to overcrowd the pot. Fry for about 5-7 minutes, flipping a few times until the internal temp of the chicken is 160°F. Transfer to a tray lined with paper towels and repeat with remaining chicken.
  6. Cook your waffle according to the waffle maker's instructions and place on your serving plates. 
  7. Make the maple hot honey sauce: add the maple syrup, butter and Hot Honey BBQ seasoning to a small pot or bowl and warm on the stove or in the microwave until the butter is fully melted. Stir together. 
  8. Place the fried chicken on top of the waffle and drizzle the maple hot honey sauce on top. Serve immediately and enjoy!
