Chai Pani Masala Apple Collins

On September 22, Meherwan's debut cookbook hit shelves, and the launch party landed at Chai Pani Asheville. A party needs a drink. And that job went to Sarah Adams, who runs the bar there and last brought us the MSG Tomato Martini.

One of her answers for launch night was the Masala Apple Collins ๐ŸŽ

A Collins is a bar classic with a plain frame: spirit, lemon, sugar, soda, served tall. Sarah kept the frame and rebuilt the sugar. Her syrup starts with fresh-pressed apple cider and jaggery, the unrefined cane sugar used all over India, which gives it a darker, almost caramel depth that white sugar can't match. Whole Cinnamon Sticks and Chai Masala simmer in with the cider, followed by fresh minced ginger.

  • Ingredients

    For the cocktail

    • 1.5 oz Gin
    • 1.5 oz Masala Apple Syrup
    • 0.5 oz lemon juice
    • Club soda
    • Garnished with an orange wheel

    For the Masala Apple Syrup

    • 1/2 gallon fresh-pressed apple cider
    • 42 oz (by weight) jaggery (or light brown sugar)
    • 8g Spicewalla Chai Masala
    • 70g fresh ginger root, minced
    • 7 Spicewalla cinnamon sticks

    Preparation

    To make the Masala Apple Syrup

    1. Combine the apple cider, sugar, cinnamon sticks, and chai masala in a pot.
    2. Bring to a boil, then simmer for 10 minutes, and then add the ginger. Simmer for another 10 minutes.
    3. Remove from heat, strain immediately, and let cool. Syrup lasts 7-10 days in the fridge.ย 

    To make the Masala Apple Collins

    1. Add all ingredients into a cup with ice.
    2. Stir, garnish, and enjoy!
