Eggnog tastes like the holidays because of one spice. Take the nutmeg away and you're left with sweetened custard. When our friends at Big Spoon Roasters in Durham set out to turn eggnog into a nut butter, they started with Spicewalla Nutmeg, the same Indian nutmeg we sell by the tin, and built the rest of the jar around it.
Spread it on a warm English muffin and let it sink into the nooks. A spoonful stirred into oatmeal turns breakfast into a holiday morning. Crisp apple slices were made for dragging through it. It also bakes well into cookies and bars, though plenty of jars never make it that far. Put one on the kitchen table with a handful of spoons and see how long it lasts. It barely made it through one meeting in our office.

The base is pan-roasted Fair Labor cashews and Organic Texas pecans, milled fresh and seriously creamy, roasty, and, well, nutty. Pure Vermont maple syrup adds sweetness without taking over. Vanilla rounds out the edges. A pinch of Jacobsen Sea Salt keeps each spoonful balanced between sweet and savory, so the nutmeg can sit right on top, warm and a little woodsy, like a fresh grating over a cup of the real thing.
