Spice Advice: Tandoori Masala Nicole Detwiler 4/7/2020 Share Pin Tweet SPICE ADVICE: TANDOORI MASALA Spicy, tangy, and bright. A blend engineered to impart maximum flavor, even for those of you without a clay tandoori oven (winky face). The clay oven, known as a tandoor, has been a part of Indian and Pakistani cuisine dating back thousands of years. Originally used to make breads like naan & roti, it wasn’t till the late 1940’s that tandoori cooking would start to become the culinary icon we know today. Which, we owe big time to one guy, Kundan Lala Gujral—a chef who first started experimenting with the tandoor oven in the 1920’s at a restaurant in Pakistan. Gujral began cooking chicken in the restaurant’s tandoor, marinating it in yogurt & a special blend of spices (a.k.a. Tandoori Masala). This method kept the outside super crispy (yummm!) & the inside tender. What made the dish even more popular was Gujral’s choice of spices which ended up giving the chicken a gorgeous, vibrant red hue. Delicious & not bad to look at. Obviously, people were into it. Behold, Tandoori Chicken. In the 40’s, Gujral was forced to go back to India where he opened up his own restaurant featuring his soon-to-be iconic Tandoori Chicken. He also went on to create other Indian faves like Butter Chicken using his go-to blend of spices, Tandoori Masala. Side note: Gujral’s restaurant Moti Mahal in Delhi is still open! Currently owned by his grandson Monish Gujral, the restaurant is now a chain w/ locations across the U.S. so hit ‘em up for some tasty bites once these Rona days are over.Since most of us don’t have a tandoor chilling at home, we hit our version of Gujral’s blend w/ some powerful flavors to help recreate those smoky, earthy notes. Made w/ Kashmiri Chilli Powder, Kasoori Methi, Turmeric, Cumin Powder, Coriander Powder, Garam Masala, Ginger Powder, Garlic Powder, & Chaat Masala. 10/10 recommend using as a dry rub for meats, or in your fave curry. Also amazing paired w/ yogurt for a quick & tasty marinade for veggies, tofu, or whatever you’re trying to grill/roast these days.
