  2. Spatchcock chicken…now this may be a little more challenging for someone who's never done it before, we recommend you ask your local butcher or the staff at your local grocery store meat counter to do this for you. If you are feeling ambitious, feel free to try this at home yourself. just remember to be careful. We promise its worth it!
  3. If you choose to do this at home, here is some helpful information to help you along the way, along with a video.
  4. Preheat oven to 400°F. Lay chicken breast side up on a parchment-lined sheet pan.
  5. Carefully separate the skin from the meat by running fingers under the skin.
  6. Place 3/4 of the prepared butter under the skin and spread gently by pressing down and moving around.
  7. Add remaining butter to the outer skin of the chicken and season with sea salt and pepper.
  8. Toss your vegetables with Spicewalla T-pain “The Juice”, blend with olive oil and arrange around the chicken on the sheet pan. (if your brussels sprouts are a little smaller, reserve them and add them to the sheet pan for the last 15-20 minutes of baking)
  9. Place in oven for 40 minutes or until the internal temperature reaches 165°F.
