Put some Pizzazz in your pasta salad with Za'atar!

With picnic and potluck season just around the corner, we thought we'd offer a classic Mediterranean pasta salad recipe with a twist of za'atar. We're probably all used to that same Greek Pasta salad that shows up to every Memorial Day cookout or summertime backyard barbecue. You can count on Aunt Cindy or your next door neighbor, Deborah, to show up to these events with a pasta salad, drowning in some grocery store Italian dressing, and so sweet that it could give you a cavity.  Tell Cindy and Deb to bring the dessert this year, because you've got the pasta salad under control! This fresh and vibrant salad is a meal in itself, but the "wow factor" is the Za'atar dressing.  Zesty, tart, and packed with complex flavours this dressing is delicious on any salad, especially the pasta salad recipe below! For this recipe you will need:

a small mixing bowl
a medium mixing bowl


2 tablespoons red wine vinegar
1/2 lemon, juiced
1 tablespoon Spicewalla Za'atar, plus extra for finishing
pinch of Spicewalla Sicilian Sea Salt
pinch of Spicewalla Black Pepper, Table Grind
1/3 cup extra virgin olive oil
3 cups pasta, cooked and cooled
1 cup cucumbers
1/2 cup cherry tomatoes, halved
1/4 cup red onion, diced
3 tablespoons Kalamata olives, halved
1/4 cup Feta cheese crumbles

to make the Za'atar dressing:

1. Place red wine vinegar, lemon juice, Spicewalla za'atar, salt, and pepper in a small mixing bowl, slowly whisk in olive oil until homogenous.
2. Set aside.

To Make Pasta Salad:

1. Boil pasta, with salted water. Then strain when cooked.
2. Combine pasta, cucumbers, tomatoes, red onion, olives and feta in a medium sized mixing bowl and stir together until combined. Pour dressing over salad and mix until evenly coated.
3. Sprinkle a little extra Spicewalla za'atar on top and enjoy!
