Meherwan Irani's chai inspo comes from the street-chai popular to his hometown of Maharashtra, India. Here, chai is often “cheffed up” by adding a variety of spices, like in Masala Chai. It’s more common, however, to find chai made with just cardamom or ginger. Chai Pani’s chai uses both—just enough of each to create a background of balanced flavours that allow notes of ginger and cardamom to shine through.
1 cup milk
1 cup water
A splash of Half & Half
1 tbs of Spicewalla Ginger Chai
1. In a saucepot over medium-high heat, bring all ingredients to a simmer. Continue to simmer until mixture reaches a deep tan color, usually 3-4 minutes.
2. Strain into your favorite mug.
3. Sweeten to your liking and enjoy!
