TOMATO AND TURMERIC GAZPACHO

4 medium-sized ripe tomatoes, cored and roughly chopped
1/2 red bell pepper, cored, seeded and roughly chopped
1/2 cucumber, peeled, seeded and roughly chopped
1 small sweet onion, peeled roughly chopped
1 clove garlic, peeled and smashed
2 Tbs apple cider vinegar
2 tsp kosher salt
lots of fresh Spicewalla ground black pepper
2 tsp Spicewalla Ground Turmeric
6-8 leaves of fresh basil, plus more for garnish
1/4 cup olive oil, plus more for garnish
1. Grab a couple of pieces of chopped bell pepper and cucumber and finely dice them, set aside
2. Place all ingredients in a blender and blend on high until pureed.
3. Place in a bowl and chill for at least 2 hours before serving.
4. Garnish with diced bell pepper and cucumber, fresh basil, and a drizzle of olive oil.
