Prosciutto and Caramelized Onion Strata with Amore Italian Seasoning

Our beloved Culinary Director Alyse Baca has really outdone herself this time. If you've never attempted a strata yourself, please let this be the one. Sweet caramelized onions are layered with eggy chunks of Italian bread (think savory bread pudding). Add a dash of our Amore Italian Seasoning and delicate, salty slices of prosciutto and you've got a brunch-time home run.

Ingredients

For the caramelized onions:
3 large sweet onions, sliced thinly
4 Tbsp unsalted butter
Kosher salt to taste

For the strata:
6 eggs
2 cups whole milk
1 Tbsp dijon mustard
2 Tbsp Spicewalla Amore Seasoning
Kosher salt to taste
Spicewalla Black Pepper, Table Grind to taste
1 loaf of Italian bread, torn into pieces by hand
8 oz. extra sharp cheddar cheese, grated
4 oz. parmesan cheese, grated
4 oz. prosciutto, thinly sliced
Caramelized Onions

Preparation

Make the caramelized onions:

  1. Melt the butter in a large sauté pan over medium high heat, add the onions and stir to coat in the butter. Add a pinch of kosher salt.
  2. Cook on medium high heat for 5-7 minutes, stirring frequently until the onions begin to take on a little bit of color.
  3. Turn the heat of the burner down to medium/low and stir frequently until browned. If the onions start sticking to the bottom of the pan, add 1 Tbsp of water at a time to help loosen. 
  4. Remove from the heat and set aside to cool.

Assemble the strata:

  1. In a small mixing bowl combine the eggs, whole milk, dijon mustard, Spicewalla Amore Seasoning, salt and pepper. Set aside.
  2. In a 9 x 13" casserole dish, place 1/3 of the torn bread into the bottom of the dish, top with 1/3 of the prosciutto, 1/3 of the caramelized onions and finally 1/3 of the grated cheeses. Repeat 2 more times with the remaining 2/3 of the ingredients, making sure the cheese is the last thing added on top of the strata. Carefully pour the egg and milk mixture into the casserole dish, making sure everything gets evenly saturated. 
  3. Cover with plastic wrap and place in the fridge for at least 1 hour or overnight. 
  4. Preheat the oven to 350°F.
  5. Bake for 50-60 minutes until the center is set and there is no remaining liquid at the bottom. This can be checked by carefully using a butter knife in the middle of the strata to look into the bottom of the dish. 
  6. Cool slightly and enjoy!
