Poppy Popcorn Elote Corn Salad

Fresh (or canned) corn kernels get kissed by the skillet, then tossed with creamy mayo, tangy lime, and a generous shake of Spicewalla’s Poppy Popcorn Elote Seasoning 🧂 Add juicy cherry tomatoes, crunchy onions, cotija, and cilantro, and you’ve got a salad that’s smoky, zesty, and absolutely scoopable.

  • Ingredients

    4 ears of corn, kernels cut off the cob (or, 1 can of corn drained)
    ½ cup mayonnaise
    2 Tbsp Spicewalla’s Poppy Popcorn Elote Seasoning
    Juice of 1 lime
    4 green onions, thinly sliced
    1 cup cherry tomatoes, diced
    ¼ cup red onion, small diced
    ¼ cup cotija cheese, plus more for garnish
    ¼ cup fresh cilantro

    Preparation

    1. Heat a large skillet over medium-high heat.
    2. Add the fresh corn kernels and saute until they begin to take on some color, stirring frequently
    3. Place the kernels in a mixing bowl and cool slightly.
    4. Add the mayonnaise, Spicewalla’s Poppy Popcorn Elote Seasoning, and lime juice to the corn and stir to combine.
    5. Add the green onions, cherry tomatoes, red onion, cotija cheese, and fresh cilantro to the bowl and toss everything together until evenly distributed. 
    6. Chill or serve immediately. Enjoy!
