Pan fried Peanuts with Bharuch Masala

Chef Vishwesh Bhatt's Bharuch Masala spice coated peanuts are the perfect munchie to put out at a party or to keep around the house as a snack. The peanuts are covered in a savory blend of spices and a little kick from the fried serrano pepper. You won't be able to stop eating these things

  • Ingredients

    2 cups dry roasted, unsalted peanuts 

    1⁄4 cup peanut or other neutral oil

    1 ½ Tbs Bharuch Masala 

    1 tsp minced ginger

    2 Tbs thinly sliced scallion whites- save the greens 

    1 serrano chili slit in half

    2 cups dry roasted, unsalted peanuts 

    1 tsp salt

    1⁄2 tsp sugar

    1 Tbs lime or lemon juice

    Preparation

    1. Slowly heat the oil and Serrano pepper until the pepper is fragrant and starts to color.
    2. Add the Bharuch masala, ginger, scallion whites in the oil and stir until ginger and scallions start to color as well.
    3.  Stir in the peanuts, salt and sugar. Mix well and cook, stirring constantly until the peanuts are warm and completely coated with the spiced oil mixture.
    4.  Turn off the heat, stir in the lime/lemon juice and serve.
    5. Garnish with thinly sliced scallion greens.
