Matt Morse's Golden Milk Clarified Milk Punch

Bar Manager Mathew Morse first came across the mysterious clarified milk punch in Big Sky, Montana and fell in love with the science behind how it works. This drink, (also called English milk punch) has roots dating back to at least the 1600’s! In the era before refrigeration, stability was a big part of the draw; once clarified the drink could be stored for long periods. The smooth, creamy mouthfeel is enough to make it an instant fave when it comes to sumptuous Holiday cocktails.

The clarified milk punch is a perfect alternative to the classic eggnog that will leave your friends and family in awe. Mathew Morse has made this his yearly cocktail tradition, spending years perfecting his recipe to bring you his holiday traditions to your table.

Ingredients

1 bottle Del Maguey Vida Mezcal 
1/2 bottle Illegal Joven Mezcal 
1/2 bottle Espolon Blanco
1/2 bottle Espolon Reposado 
1 bottle Amontillado Sherry 
1/2 bottle Oloroso Sherry 
32 oz whole milk 
15% Citric acid solution (combine 15g citric acid and 100g water) 
12 g Spicewalla Golden Milk
Chamomile honey to taste

Preparation

  1. Start by adding all the liquor and Spicewalla Golden Milk in a large container 
  2. Let that rest for half an hour then strain using a coffee filter to get out the spice sediment 
  3. Next dump all the milk into another large container 
  4. Next pour the liquor into the milk (NOT MILK INTO LIQUOR TRUST ME) 
  5. Let sit for half an hour 
  6. Start slowly adding your citric acid and gently stirring the mixture until the milk breaks and curdles 
  7. Run this carefully through a fine mesh strainer being careful not to break any of the milk solids 
  8. Once that has been strained run it through a strainer with a coffee filter! 
  9. Add the chamomile honey and the drink is done!
  10. To prepare add three ounces of the batch to a mixing glass stir for thirty seconds
  11. strain into a rocks glass with a big rock 
  12. Peel an orange and zest it over top and drop it in
