Cast Iron Breakfast Skillet

This is a one-pot, easy cleanup, simple-to-do camping breakfast. Most of the ingredients stay fresh outside of refrigeration. The only ingredients which need to keep cold are sausage and obligatory sauces. Don’t cook this over a raging fire, try to build it up to the point where 3-4 split logs have caught and are burning down. If your fire is taller than the pot, it’s likely too hot. 

Hint: The key is to not overcook anything too early. If you burn your potatoes & onions early on, put them aside and keep going, they will not improve with more cooking.

Ingredients

  • 1.5lb Cubed Potatoes

  • .5lb sausage (optional)

  • 1 Yellow Onion

  • 1 Red Pepper (optional)

  • 1 Head Garlic

  • 4tbsp Graza Sizzle Olive Oil

  • 8 eggs

  • 1 tbsp Spicewalla Piri Piri

Preparation

  1. Place cast iron pot over medium-to-high heat and add Graza Olive Oil once the pot is hot

  2. Add potatoes and spread evenly

  3. Shift around potatoes every few minutes to prevent any from getting burned, cook about 10 minutes, until lightly golden

  4. Add onion and stir, cook 5 minutes

  5. Add garlic, pepper, and Spicewalla Piri Piri; stir, cook 5 minutes

  6. Push the potato mixture to one side, add sausage to the opposing side

  7. Cook sausage until it is completely brown, about 4 minutes

  8. Mix the sausage with potato and push to the side

  9. Crack eggs in the pot on the opposing side and toss occasionally to scramble

  10. Serve and garnish with more Piri Piri, and your favourite aoili
