Black Garlic Cucumber Salad

There's something magical about the contrast of cool, crisp cucumbers against bold, punchy flavours. This asian style cucumber salad delivers exactly that, with our minced black garlic adding a delicious depth that transforms a simple side into something truly memorable.

    Preparation

    1. Slice cucumbers in half lengthwise. Using the flat side of the knife, smash them lightly with the flat side of a knife and break into bite-sized pieces. Place in a colander or sieve over a bowl, sprinkle with a pinch of salt, and let drain for 10 minutes to remove excess moisture.
    2. In a large bowl, whisk together the minced black garlic, rice vinegar, soy sauce, sesame oil, honey, and red pepper flakes. Let this sit for 5 minutes to allow the black garlic to rehydrate.
    3. Pat the cucumbers dry with a paper towel and add them to the bowl with the dressing. Toss well to coat every piece.
    4. Sprinkle with toasted sesame seeds and sliced scallions. Toss to incorporate.
    5. Serve immediately and enjoy!
