Mace is more than a self-defense tool! Whole mace comes from a fruit that’s a very close relative of nutmeg. (They look almost exactly the same on the tree.) But mace the spice is made from the dried, ground membrane, called aril, that surrounds the fruit’s pit, which has a nutty, lemony warmth. For a time, mace was as popular as nutmeg, and used as a key ingredient in India (where it’s a staple in massaman curry) and England.
