Popsicles are an iconic summer refreshment and we couldn't help but whip up some floral, tangy, ice cold pops as we head into summer! Spicewalla’s Lavender Flowers and Lemon Peel are the perfect combination with strawberries, representing the flowers and fruit abundantly growing during summer time. This recipe is very versatile, so feel free to swap out or add in any summer fruit or juice you have on hand- you can’t go wrong!
LAVENDER LEMON SUMMER POPS
10-12 strawberries, frozen and thawed or fresh, diced
1 c of water or fruit juice, divided
2 Tbs honey, maple syrup, or simple syrup, divided
3 Tbs Spicewalla Lemon Peel
3 Tbs Spicewalla Lavender Flowers
PREPARATION1. In a small bowl combine lavender flowers, 1 Tbs sweetener of your choice, and ½ cup water. In a separate bowl repeat the same process with lemon peel instead of lavender. Let sit for at least one hour, or overnight. The longer this infuses the stronger the flavor of the syrup will be.
2. In a food processor/blender or by hand, mash up all of the strawberries with ½ cup of water until it is pureed. (Depending on whether you use fresh or frozen strawberries you may need to adjust the water amount to achieve a puree consistency)
3. Using a fine strainer or cheesecloth, strain both lavender and lemon peel syrups into the food processor with puree, stir to incorporate. Discard leftover lavender and peel.
4. Evenly distribute mixture into a 6 compartment popsicle mold. Freeze for at least 6 hours or until fully frozen. To remove popsicles from the molds, place in a bowl of warm water for a few minutes. Enjoy!
